When sitting on the ball, your knees and hips should approximate a 90 degree angle or slightly higher. Here are some general guidelines:
4'8" to 5'3" --55cm
5'3" to 6'0"-- 65cm
6'0" to 6'7" --75cm

If your height is between the specifications, you may need the larger size if you have long legs or carry extra weight for your height. If there is doubt, a larger ball is recommended because it can be slightly under inflated.
